Ur-Spo’s Ultimate BBQ Sauce
2 cups ketchup
¼ cup packed dark brown sugar
¼ cup apple cider vinegar
¼ cup Worcestershire sauce
1 T dark molasses and 1T honey (if you prefer it less sweet, use 2T molasses)
2 T Dijon style mustard
1 T chili powder
1.5 T Tabasco sauce
Real horseradish to taste, ~ 1 heaping tablespoon
½ t fresh ground pepper
2 t liquid smoke
Mix all the ingredients in a sauce pan. Bring it to a boil, reduce heat to simmer. Simmer for half an hour.
For Heat < increase the hot sauce.
For Tang ; increase the Worcestershire.
For Sweet ; increase the Molasses or the Honey.
BBQ Sauce II
1/4 cup of dried minced onion
1 cup ketchup
3/4 cup Dr. Pepper
1/4 cup vinegar
1/4 cup margarine
2.5 T worcestershire
2 T sugar
1 T lemon juice
1 t salt
1/2 t black pepper
1/2 t cayenne pepper
Mix all ingredients in a pan. Bring to boil then simmer on medium/low heat x 30 minutes until it thickens.
Upon refridgeration, it thickens more.
Mustard-Bourbon BBQ Sauce
1 T olive oil
2 bunches of green onions, chopped
2 cups chopped white onions
8 large garlic cloves, chopped
2 cups packed golden brown sugar
1 cup catsup
1 cup tomato paste
1 cup Dijon Mustard
1/2 cup Worcestershire
1/2 cup apple cider vinegar
1/2 cup apple juice
1 T cumin
2 cups Bourbon
Heat oil in a pan over medium heat. Add green and white onions, and garlic and saute until tender, Mix in all the remaining ingredients, adding the bourbon last after the others are blended. Bring to a boil, reduce and simmer until the sauce is reduced , about 1 hour.
